Crispy Cod, Satay Sauce, Peanuts, Lime

Ingredients
90g   Miso marinated cod pieces
30g Julienne veg mix  (equal parts spring onion, red pepper)   
1g Picked coriander
10g Som tam dressing
25g Satay sauce
1x Lime wedge

90g Beer batter

MOP
-      Place the marinated cod in the beer batter and fry at 180c for 3 minutes, cod will be cooked through and the batter light crispy and golden brown. Remove from the fryer onto a jay clothe to allow the excess oil to be drained. Season with fine salt and pepper
- In a mixing bowl combine the julienne veg,, picked coriander and som tam dressing
- To plate place the crispy cod pieces on a walled plate with a brown rim, place the dressed julienne vegetables to the side, the satay sauce in a glass ramekin and serve with a 1/2 lime wedge

Peanut Butter.

Ingredients
600g Peanuts
7g Salt

MOP
-
toast your peanuts at 180c till golden brown. Once browned place the warm peanuts in the thermocoupe with the salt and blend until smooth. You will need to stop the machine a few times to scrape down the sides and start again.

Satay Sauce.

Ingredients
200g Coconut milk
25g Soy sauce
125g Dark brown sugar
135g. Ginger
52g Lime juice
12g Chilli, finely chopped
12g Garlic
450g Peanut butter (Homemade)
80g Water

MOP
- Combine all your ingredients in a sauce pan and bring up to a simmer till at the consistency shown in the video below. Refrigerate till needed for service.

Miso Marinade

Ingredients
120g    Miso paste
64g Mirin
90g Sugar
64g House vodka


MOP
-      Bring all the ingredients to a boil whilst whisking. Once boiling remove from the heat and allow to cool.
- Refrigerate until needed

Som Tam Dressing

Ingredients
60g Lime juice
60g Fish sauce
80g Caster sugar
20g Garlic, microplaned
20g Ginger, microplaned
20g Soy sauce, gluten free

MOP

In a mixing bowl whisk all the ingredients together to combine
- Refrigerate until needed


Waiters Notes
Cod pieces marinated in miso, battered and then deep fried - served with satay sauce, and sliced vegetables dressed in som tam dressing
