Watermelon, cucumber, feta, chilli.

Ingredients
150g      Watermelon, skin removed Note: no white bits left
23g        Cucumber, ribbons rolled up
4g         Spring onion, thin ly sliced on an angle
10g Radish, thinly sliced (10 pieces)
1g Chives, finely chopped
4g Chardonnay vinegar
5g Olive oil
2g Chilli oil
15g Feta, diced
3g Red chilli, deseeded & thinly sliced

1g Sumac
1g Red vein sorrel


MOP
- Toss the first set of ingredients together and season
- Place the seasoned ingredients into the small bowl and finish with the 5 pieces of red vein sorrel

Chilli oil.

Ingredients
50g    Chilli flakes
100g    Fresh red chilli, halved length ways
30g     Garlic cloves
8g      Fine sea salt
500g   Olive oil
1500g Vegetable oil     

MOP
-      Vacuum pack all ingredients together and sous vide @ 65c for 8 hours to infuse the flavors without burning the chilli’s
- Once infused remove from the water bath and allow the oil to chill with all the ingredients still inside
- Once chilled strain the oil and discard the remaining ingredients. Store the chilli oil in a squeeze bottle in the fridge. Note. Do not rub your eye’s after working with this oil.
