Grilled Aubergine Sandwich.

Ingredients
25g Grilled Aubergine
75g Straciatella
25g Tomato pesto (ezme paste)
7x semi dried tomato’s
5g Rocket
Olive oil & seasoning


MOP
- Toast the sourdough focaccia on the panini grill until it is crispy on the outside and warmed through
- To build the sandwich start with the tomato pesto (1) on the bottom slice of focaccia, then add the straciatella (2), grilled aubergine (3), semi dried tomato (4), rocket (5) and then finish with olive oil and seasoning before closing with the second slice of focaccia.
