I’ve said this before, but we’re still going up; this decaf is the best we’ve ever had.
It’s processed using the sugar cane method (sometimes called the EA or ethyl acetate method), which is not only good for the environment but also preserves lots of the coffee’s original flavours.
Unlike old-school decaffeination, this is done close to the farm. Locally-grown sugar cane is used to create the ethyl alcohol, which selectively absorbs caffeine from the green beans after they have been steamed. The beans are then dried and processed to the correct moisture content before shipping directly to us.
No more multiple trips across the globe to huge decaffeination centres, no more super toxic solvents and more importantly no more “f**k it, it’s only decaf” mentality - this is a big step in the right direction.
As an espresso there’s a really nice orangey acidity balanced by loads of heavy, bittersweet raw cacao, with lots of dried fruit and nut notes as well. In milk there’s just LOADS of sweetness; it tastes quite a lot like a plum tart to me.
We’re really early on in the journey of decaf, meaning that the improvements year on year are huge, which is really exciting! I can’t wait for the next one.
