Butter bean hummus.
Ingredients
175g Butter bean Hummus
3g Chilli oil
2g Olive oil
80g Spiced shiitake & aubergine mix - same spec
3g Coriander, picked
2x Mint leaves, torn into 3 pieces each
120g Flat bread
Flat bread.
7g dry active yeast
240g warm water (not too hot)
4g sugar
120g strong bread flour
26g olive oil
180g strong bread flour
6g salt
MOP
-Mix the first set of ingredients together thoroughly and leave covered at room temp allowing the yeast to activate - you should be able to see bubbles form
-Once the yeast has activated add the mix to the kitchen aid bowl along with the remaining ingredients. Using a dough hook mix on a medium speed to combine until the dough can be handled. Remove the dough from the bowl onto a floured work surface and knead the dough till you have a smooth dough.
- Place the dough in a lightly oiled bowl and keep covered at room temperature allowing the dough to double in size. At this point remove the dough from the bowl and flatted to 1 inch and then divide the dough into 120g balls and roll these to close the dough. Place the dough balls in a floured tray and cover with clingfilm
Butter bean hummus.
510g Butter beans, blended as smooth as possible
200g Aqua fava
10g Salt
50g Lemon juice, freshly squeezed
45g Olive oil
100g Tahini
2g Cumin seeds, lightly toasted and ground to powder - note: do not use cumin powder and ensure the seeds are toasted before grinding

- Heat all ingredients until warm but do not boil as this will reduce the amount of aqua lava causing the mix to be too thick. Once warm, blend all ingredients together in a vitamix until smooth. This hummus must not have any lumps.
- Store in the fridge
- NOTE: Only put small amounts into the blender at a time so to not overheat the machine
Aubergine & shiitake mix.
300g peeled aubergine, fine dice
300g shiitake, fine dice
5g cumin seeds, toasted and ground
5g coriander seeds, toasted and ground
3g chilli flakes
15g minced garlic
MOP
Add all ingredients to a pan with some vegetable oil and fry on a low heat until the aubergine and shiitake mushroom have soften and started to almost dry out slightly. Make sure to do this on a low heat as to not burn any of the vegetables.
