Chocolate & peanut sundae, brownie, cookie dough ice cream, whipped cream.
Ingredients
2scoops Cookie dough ice cream (Judes)
90g Brownie portion, warmed slightly
40g House peanut butter
5g Toasted peanuts,
30g Whipped Chantilly cream
10g Chocolate sauce
1x Sundae glass (stored in the freezer for service, glass needs to be ice cold)

- To order, place the brownie portion in the rational oven at 185c for 2 minutes
- Start building the sundae with 2 scoops of caramel and brownie ice cream, then add the warm brownie, the peanut butter, whipped Chantilly cream and finish with the chocolate sauce and toasted peanuts
- Place a square of grind paper onto a small side plate and then place the glass on top to serve.
Chocolate sauce.
Ingredients
90g Chocolate 70%
250g Sugar
500g Water
25g Corn flour
90g Cocoa powder
300g Sugar

Melt the chocolate, water and sugar in a pot until its completely dissolved. Mix the remaining dry ingredients together in a bowl and add to the wet mixture. Cook at a low temperature until the desired consistency. It should coat the back of a spoon.
Peanut butter.

600g Peanuts
7g Salt

- toast your peanuts at 180c till golden brown. Once browned place the warm peanuts in the thermocoupe with the salt and blend until smooth. You will need to stop the machine a few times to scrape down the sides and start again.
Brownie.
Ingredients
370g butter
370g chocolate 70%
170g plain flour
80g cocoa power
6 eggs
440g sugar
10g Maldon salt

Melt butter + chocolate ensuring not to boil the butter
Wisk eggs, sugar and salt in the kitchen aid till is really fluffy
Add the chocolate and butter to the eggs mix slowly and finally add the dry ingredients (flour +cocoa powder)
Oven 165° for 12 minutes or till the centre is at 75°C
Chantilly cream.
Ingredients
433g Double cream
3g Icing sugar
1g Vanilla
MOP
- Whip the double cream, icing sugar and vanilla to stiff peak stage Note. ensure the cream is not over whipped. Refrigerate till needed for service.
