Dexter Beef creamed potato.

Ingredients
80g Cooked potato, riced
40g Double cream
20g Butter
150g Bolognese
15g Butter
35g Chicken demi
1g Salt
1g Black pepper, freshly cracked


MOP
- In a saute pan heat the potato with the double cream and butter to form a rich emulsified smooth mash. Separately heat the bolognese, Serve in a bowl

Bolognese.

Ingredients
1kg Carrots, peeled & fine diced
1kg Onion, finely chopped
2kg       Beef mince, coarse ground 
2kg Beef shin
500g    House red wine
10g      Rosemary, chopped (no stalks)
10g      Thyme, chopped (no stalks)
3x   A10 tins Tomato sauce 
500g Chicken demi

MOP
-      Chargrill the beef shin
-      In a large, heavy based pot sweat the onions & carrrots until soft. Once soft remove from the pot
-      Add the beef mince and brown. Ensure there are no large chunks of cooked mince.
-      Cook the mince until all juices have reduced.
-      Remove the beef mince and deglaze the pan with the house red wine and reduce
-      Add the soften vegetablesand beef mince back to the pan
-      Add the herbs, grilled beef shin, tomato sauce and chicken demi
-      On a low heat simmer for 5 hours, the beef should be falling off the bone and pulling apart. The sauce should be thick and rich in flavor.
-      Season to taste with salt & pepper
-      Cool in hotel pans
-      Ensure all beef shin meat is flaked down and the bones have been removed
