120gm of estate diary yoghurt
70gm of granola
100gm of strawberry mix
1gm of torn mint leaves

STRAWBERRY PUREE
1kg of frozen strawberry puree
100gm of sugar 

METHOD

  • In a pot add the frozen puree and sugar

  • Gently bring to the boil 

  • Remove from heat 

  • Leave to cool, store ready for service

FRESH STRAWBERRIES
400gm of diced fresh strawberries
15gm of caster sugar

METHOD

  • To a bowl, add both the sliced strawberries and sugar and mix well

  • Store ready for service

STRAWBERRY MIX
400gm of fresh strawberry mix
200gm of strawberry puree

METHOD

  • Add both ingredients together and mix well

  • Store ready for service 

To plate, place the yoghurt down first followed by 1/2 of the strawberry mix. add the granola followed by the other 1/2 of the strawberry mix and finish with the mint.
