Flat iron steak, watercress, creme fraiche.
Ingredients
180g Flat iron steak, thick & square cut (marinated in chopped thyme, rosemary, garlic & vegetable oil
25g Baby watercress
25g Horseradish cream
MOP
- Season the steak and cook to the desired tempreture
- Allow to rest for the same amount of time the steak was cooked for.
- Slice with a sharp knife and serve with the horseradish cream, watercress and some freshly microplane horseradish over the dressed watercress
Horseradish cream.
Ingredients
250g Creme fraiche
125g Freshly grated horseradish
30g White wine vinegar
seasoning to taste
MOP
- combine the microplaned horseradish and white wine vinegar together with some salt, leave at room temp for 30 minutes. At this point add inn the creme fraiche and adjust your seasoning. Check how strong the horseradish flavour is and add more horesradish or creme fraiche if needed.
