Grilled Courgette Sandwich .
Ingredients
25g Grilled courgettes
75g Straciatella cheese
25g Tomato pesto (ezme paste)
7x Semi dried tomato’s
10g Rocket, washed
1x sourdough focaccia
seasoning (malden salt & black pepper)

- Toast the sourdough focaccia on the panini grill until it is crispy on the outside and warmed through
- To build the sandwich start with the tomato pesto (1) on the bottom slice of focaccia, then add the straciatella (2), grilled courgettes (3), semi dried tomato (4), rocket (5) and then finish with olive oil and seasoning before closing with the second slice of focaccia.
