Italian Club Sandwich.

Ingredients
40g Cooked Chicken breast
10g Mustard dressing
35g San Daniele ham
1/2 Avocado
4x Basil leaves
10g Shaved parmesan

MOP
- Toast the sourdough focaccia on the panini grill until it is crispy on the outside and warmed through
- To build the sandwich start with the avocado (1) on the bottom slice of focaccia, pulled chicken (2), mustard dressing (3), basil (4), sliced San Daniele Ham (5), shaved parmesan (6) and then finish with olive oil and seasoning before closing with the second slice of focaccia.

Mustard & Honey Dressing.

Ingredients
200g Dijon Mustard
156g Wholegrain mustard
150g White wine vinegar
105g Honey

250g Vegetable oil
250g Olive oil

MOP
- Add the first 4 ingredients together in a bowl and combine
- Mix the two oils together
- Whilst whisking, slowly stream in the oil to the bowl with the first 4 ingredients little by little, you’ll notice this starts to emulsify. Continue adding the oil until it is all incorporated and the dressing is well combined.
