Northern Lights.
Ingredients
30ml Reyka Vodka
15ml Lemon Juice
20ml Mint Syrup
5-6 Pieces of left over cucumber
5 Mint leaves
Garnish
1 rolled cucumber slice & 1 mint leaf

MOP
- Place ice in a coupe glass and chill before building the drink
- Line the rim of the coupe with sugar
- Add all ingredients to a shaker and muddle to break up the fruit and release its flavour and colour
- Once muddled, wet shake with ice until shakers are ice cold
- Double strain the cocktail into the glass ensuring not to spill any drink on the outside of the glass
-Add cucumber and mint to a cocktail skewer and place off centre as shown in the image above.
Discarded mint syrup.

30g discarded mint stalks and old mint leaves
250ml water
250g sugar
MOP
- Place the mint stalks and mint leaves into a shaker and cover with a little water. Muddle to release the oils from the stalks and leaves.
- Add the remaining water and sugar to a pan and heat to dissolve the sugar. Once dissolved strain the mint water and add to the sugar syrup. Reserve till needed for service
