One Pan Eggs V2.0
Ingredients
220g Gochujang tomato sauce
40g Spinach
40g Red pepper and onion mix
2x Whole eggs
4g Spring onion, sliced
8g Sliced red chilli
2g Coriander
90g Sourdough (one slice< toasted)

- Portion the first set of ingredients in a 16 ounce container
- Place the cast iron staub pan on the stove and decant the portion of gochujang tomato sauce and spinach into the pan, lightly fry for 1 minute to soften the spinach
- Add the 2 eggs to the pan and allow to fry genty in the pan with the tomato mix
- Place under salamander to finish, ensuring the eggs do not overcook note: the whites should be set but the yolks runny
- Toast the sourdough and slice in half on an angle
- Once eggs are cooked, garnish with spring onion, sliced red chilli & coriander
Homemade Tomato Sauce.
Ingredients
2x A10 tins peeled tomato
350g Onion, sliced
40g Garlic, sliced
2g Maldon sea salt
1g Black pepper, coarse ground

- Saute onion and garlic till soft
- Add the tinned tomato and cook for 45 minutes on a low heat
- Remove from heat & season
- Blitz till smooth and chill
Gochujang Tomato Sauce.
Ingredients
100g Gochujang
2200g Housemade Tomato Sauce
20g Salt

- Mix all ingredients together and portion for one pan eggs
Red Pepper & Onion Mix.
Ingredients
250g Sliced red peppers
500g Sliced white onions
100g Rapeseed oil
30g Sugar
MOP
- - Sweat down the red peppers & onions until soft, add sugar and continue to reduce until sticky.
