Pancetta, Date, Chorizo Meatballs.

Ingredients
3x       Chorizo stuffed dates wrapped in bacon (30g each)
80g    Homemade tomato sauce
1g        Chopped dill
1g        Chopped parsley

MOP
-      Bake the dates in the oven for 3 minutes at 210c
-      Add the homemade tomato sauce the pan with the dates and bake for a further 3 minutes

Chorizo Sausage Mix.

Ingredients
1.2kg   Pork sausage meat
12g      Smoked paprika
3         Garlic cloves, microplaned
13g      Black pepper
9g        Fennel seeds
50ml Red wine

MOP
-      Mix all ingredients together thoroughly 
-      Allow to rest for 24 hours before using

Stuffed Dates. 

Ingredients
½ X     Medjool dates, pit removed, 
30g     Chorizo sausage mix
1x        Bacon, sliced

MOP
-      Stuff ½ a date with 30g of fresh chorizo sausage meat ensuring the skin of the date wraps around the chorizo sausage filling
-      Wrap each date with a slice of pancetta and place in a sheet tray

House Tomato and red pepper Sauce

Ingredients
2x        A10 tins peeled tomato
1/2. Tinned red pepper
350g   Onion, sliced
40g     Garlic, sliced
2g        Maldon sea salt
1g        Black pepper, coarse ground

MOP
-      Saute onion and garlic till soft
-      Add the tinned tomato and cook for 45 minutes on a low heat
-      Remove from heat add the tinned red pepper and season
-      Blitz till smooth and chill

Waiters Notes
3 medjool dates stuffed with fresh chorizo meat then wrapped in pancetta. They are then roasted with homemade tomato sauce.
