SMOKED SALMON CRUMPET &
HERB CREAM CHEESE
Allergies: Fish, Eggs, Milk (Dairy), Sulphites, Gluten
Allergen adjustments:
Dairy free - remove herb cream
Gluten free - remove crumpets & GF toast
Egg free - remove eggs
Fish free - remove salmon or suggest ham.
2 crumpets
50gm portion of smoked salmon (25gm each crumpert)
60gm of cream cheese mix (30g on each crumpet)
10gm of rocket
2 poached eggs
10ml of parsley oil
2g of pumpkin & sunflower seed mix
¼ lemon wedge
HERB CREAM CHEESE
300gm of soft cream cheese
20gm of thinly sliced spring onions
15gm of roughly chopped dill
20gm of roughly chopped flat leaf parsley
Zest of 1 lemon
8ml of freshly squeezed lemon juice
30gm of lilliput capers
METHOD
Mix all the ingredients together and mix well
Taste seasoning
Store in a blue piping bag ready for service
GREEN OIL
1 bunch of flat leaf parsley with 80% of the stalk removed
300ml of veg oil
METHOD
* Add both ingredients together in the to the thermo
* Set on 50 degree, speed 10 and blend for 5 to 7 mins
* Strain and cool over ice ASAP
