Seasonal filled pastry

Ingredients:
1 x Blank custard danish
30g cream cheese frosting
4 slices macerated seasonal fruit (November to January fig)
2g icing sugar

Prep:
1: In the centre of the danish add your cream cheese frosting
2: Add your macerated figs/ seasonal fruits on top of the cream cheese
3: Add a generous amount of icing sugar over to top.
4: Add to the pastry cabinet, be cafe not to stack the pastries.

Cream cheese frosting
Ingredients
:
200g cream cheese
200g Double cream
40g Icing sugar

Prep:
Add the ingredients into a bowl and whisk until it forms thick ribbons.
Store in appropriate container and label. (3 days including the day of production)

Seasonal fruits
Ingredients:
2 figs
5g Icing sugar

Prep:
Cut your fig into 8ths
In a bowl mix the above ingredients together carefully ensuring not to break the figs.
Leave to rest for 5 minutes
