Spicy Salame Sandwich.
Ingredients
75g Spicy Straciatella
40g Salame Soppressata
5g Rocket
10g Shaved parmesan
10g Popponcini peppers
1x Focaccia portion

- Toast the sourdough focaccia on the panini grill until it is crispy on the outside and warmed through
- To build the sandwich start with the spicy straciatella (1) on the bottom slice of focaccia, poppocini peppers (2), salame soppressata (3), rocket (4), shaved parmesan (5) and then finish with olive oil and seasoning before closing with the second slice of focaccia.

3kg Straciatella
300g Nduja

- Place the Nduja (In its packaging) into a stainless steel bowl and cover it with boiling water from the coffee section and allow to sit in the boiling water for 10-15 minutes, the Nduja needs to be soft
- Remove the nduja from the plastic and casing and mix this into the straciatella using your hands to ensure it is evenly mixed (wear gloves)
