Ingredients
180g    Sweet potato wedges, roasted
20g      Dukkah
30g     Lime Yoghurt
1g        Maldon sea salt

MOP
-      Place the roasted sweet potato into the fryer and fry till crispy
-      Remove to a stainless-steel bowl and partially smash & season
-      Place the wedges in a small bowl and top with the yoghurt, lime juice, dukkah & micro corriander
-      Finish with a gentle drizzle of olive oil

Dukkah spice mix
Ingredients
220g Peanuts
28g Coriander seeds
160g White sesame seeds
10g Maldon sea salt
30g Cumin seeds

MOP
-      Toast the peanuts, coriander seeds, cumin seeds and white sesame seeds separately until golden brown
-      Roughly crush in a mortar and pestle and season

Lime Yoghurt
Ingredients
500g Yoghurt
3 Limes zested and juiced

Mixed all the ingredients together
- Store and label for service
