Grind cheeseburger.

Ingredients
2x70g Beef steak burger patties, black angus 
8x        Gherkin slices
25g     Homemade mayonnaise
4x        Kerrymaid cheese slices 
20g     Cripsy onions
1x        Portion of fries
1x        Burger bun

Packaging
1x Pink grind carrier bag, product code FN01GRD
1x 12oz Double wall cup, product code SD04GRD

MOP
-      Season the burger patty’s with salt and pepper and cook medium, top with two slices of cheddar on each patty and melt
-      Toast the burger bun on the bottom shelf of the salamander until golden 
-      To serve spread mayonaisse on the bottom and top bun note: ensure the mayo is spread to the edge of the bun
-      Place the burger pattys on the bottom bun topped with the sliced pickle
-      Place the cripsy onions on the top bun and place on top of the patty’s
-      Wrap the burger in tin foil and serve with skin on triple cooked chips in a large take away coffee cup with extra fries thrown into the pink grind bag

Homemade mayonnaise.

Ingredients
200g   Egg yolk, pasteurised
55g     Dijon mustard
25g     White wine vinegar
10g     Table salt

 875g   Vegetable oil

MOP
-      Blend the first 4 ingredients until smooth
-      Slowly stream in the vegetable oil to emulsify

Triple cooked chips. 

MOP
-      Skin on 10mm agria chips ordered from solstice
-      Steam the chips @ 100c for 7 minutes and chill
-      Blanch the chips in the deep fat fryer set to 130c for 6 mnutes, cool and store till needed for service
-      To order fry @ 180c in oil till golden brown and season with salt

Crispy onions. 

Ingredients
500g   Thinly sliced onion
150g   Gluten free flour

MOP
-      Coat the sliced onion in the flour thoroughly
-      Deep fry @130c until golden brown note: the onions should not have any dark spots after frying or they will be bitter.

Additions.

Add Bacon
-      2 rashers of bacon cooked to order and placed on top of the pattys between the pickles and crispy onions on top
Add Avocado
-      ¼ large hass avocado sliced and placed on the bottom bun, on top of the mayonnaise
Add Egg
-
Fried egg placed on top of the pickle & bacon (if ordered with bacon) and under the crispy fried onions
