Burnt cheesecake, strawberries

Ingredients
1x Cheesecake slice (12 portions per tin)
60g Macerated strawberries

MOP
- Place the slice of burnt cheesecake on a white walled plate
- Place the strawberry pieces next to & on top of the cheesecake and spoon a bit of the strawberry syrup over the the strawberries

Brunt cheesecake batch.

Ingredients all at room temperature.
5x eggs
260g caster sugar
750g Philadelphia cream cheese
375g Double cream
25g Corn flour
1x Vanilla pod, seeds only


MOP

Place all ingredients into the thermocoupe and mix for a couple of minutes ensuring not to add too much air to the mix
- Line your springform tin with parchment paper and pout in your mix ensuring the mix fills the tin to the top
- Bake in the rational at 200c, fan 2 for 35 minutes

Macerate strawberries.

Ingredients
100% Strawberries, stem removed and cut into quarters
2.5% Icing sugar

MOP
- Combine the icing sugar and cut strawberries and refrigerate till needed. Ideally these should be done the day before service to allow some of the juices to pull from the strawberries to create a strawberry syrup
