Chicken Skewer, Soy, Chilli, Mayo, lime

Ingredients
100g Chicken sausage mix
15g Mayo
10g Tare sauce
1g        Togarashi spice
1x metal kebab skewer
1x Lime wedge
3g Peanuts, toasted and chopped
10x Rounds of pickled cucumber mixed with fresh mint and coriander

MOP
-      Form the chicken sausage meat onto the skewer and seal these off on the flat top. Ensure the chicken is browned all over and holding its shape. Cool these and reserve till needed in service
- to order place the chicken sausage into the rational oven at 200c and cook for 5-6 minutes. Ensure the internal temp of the chicken is a minimum of 75c. Once cooked remove from the oven and brush with the tare sauce. Using the blow torch, torch the glaze on the chicken till sticky, repeat this process 2-3 times until the chicken is completely glazed and sticky.
- Finish with chicken off with mayonnaise that is squeezed out of a piping bag, some more glaze, togarashi seasoning & chopped peanuts

Chicken Sausage

Ingredients
1kg Chicken thighs, skinless & boneless (Diced and par frozen)
110g Panko
29g Sake
22g Mirin
2g Minced ginger
2g Minced garlic
15g Soy sauce
15g Miso
8g Fine Salt
4g Corn flour
2g White pepper, ground
2x Eggs
100g Chopped onion

MOP
-
Pulse the par frozen chicken thigh pieces in the robot coupe till the consistency of minced meat (ensure you do this in small batches to avoid making the meat smooth)
- Combine all ingredients and mix throughly. Allow to refrigerate for 1 hours before use
- Portion the chicken sausage meat into 50g fingers and par cook at 160c till the chicken reaches an internal temperature of 74c

Tare marinade

Ingredients
255g Soy sauce (Gluten free)
255g Mirin
100g Dark Brown sugar
30g White wine vinegar
33g Garlic,
6x Spring onion stalks
30g Ginger, Peeled and sliced
14g White pepper corns
70g Sweet chilli sauce

MOP
- Combine all ingredients in a pan and bring to a boil
- Reduce by half and then strain before refrigerating for service

Togarashi seasoning.

Ingredients
19g      Togarashi spice
38g     Flaked red chilli 
6g       Nori sheets, blended until small flakes

MOP
-      Mix all ingredients together thoroughly and store in a sealed dry container at room temperature.
