Vegan Sandwich .

Ingredients
1x focaccia portion
15g grilled courgette
15g grilled aubergine
20g vegan mozzarella
3 slices of beef tomato
25g Vegan purple basil pesto
3g Aged balsamic
Olive oil & seasoning

MOP
- Toast the sourdough focaccia on the panini grill until it is crispy on the outside and warmed through
- To build the sandwich start with the vegan purple basil pesto
(1) on the bottom slice of focaccia, then add the beef tomato
(2), grilled courgette and aubergine
(3) vegan mozzarella
(4) and then finish with olive oil and seasoning before closing with the second slice of focaccia
