30ml Discarded Banana Rum
10ml Winter spice
8g butter, quartered
80ml water

- Add all the ingredients into the cocktail milk jug
- Heat with the steam wand, swirl to melt butter
- Pour the drink
- Add slice brulee banana on skewer
Brûlée Banana
- Cut a long slice of banana
- Sprinkle with caster sugar
- Caramelise with blowtroch
