House Salad
Ingredients
1x Baby gem, leave separated
25g House Dressing
10g Soy, pumpkin seeds
MOP
- Place the baby gem leaves in a large bowl and dress with the house dressing
- Add the chopped chives mix well.
- Place all the leaves in the bowl making the leaves sitting vertical
- Finnish with the soy pumpkin seeds one top
Soy Pumpkin Seeds
Ingredients
15g. Soy Sauce, GF
10g. Water
15g. Sugar
3g Salt
250g. Pumpkin seeds
MOP
- Whisk soy, salt, sugar together with the water
- Add the pumpkin seeds ensuring they are evenly coated
- Place in a gastro line with parchment and bake at 162’c for 15 minutes
- Stirring every 5 minutes until dry.
House Vinaigrette
Ingredients
26g Rice vinegar
15g Lemon juice
5g. Salt
14g. Sugar
22g. Dijon Mustard
10g Olive oil
50g Vegetable oil
137g Pickle liquid
MOP
- Whisk the first set of ingredients together to form a paste
- Once the paste is formed whisk in the oils ensuring an emulsion is formed
- Finish by whisking in the pickle liquid
